A Culinary Journey Rooted in Tradition
The story of Farm Boy BBQ goes well beyond the smoker. The journey begins in rural Louisiana, where owner and chef Paul Marshall’s love for cooking took root at a very young age. By the age of four, Paul was baking pies with his grandmother, and by six, he was cooking breakfast for his mother. This early immersion in food and flavor paved the way for a lifelong career in the culinary arts.
Paul's formal culinary training began when he worked at Chez Oca at just 14 years old, where he started learning classical French techniques. His path eventually took him to some of the most prestigious kitchens in the world, including the Four Seasons Hotel Beverly Hills and Commander’s Palace in New Orleans, where he worked as sous chef under famed chef Emeril Lagasse. Paul also served as the youngest executive chef at the luxurious Boca Raton Resort & Club and oversaw multiple kitchens as the executive chef for the Olympic Games in Greece and Italy.
But it was a dinner at the James Beard House in Greenwich Village in 2005 that would change Paul’s life—and lead to the start of his BBQ journey. It was here that Paul met his future wife, Julie, who shared his passion for food and hospitality.
Together, Paul and Julie eventually found their way to Malvern, Pennsylvania, where they restored a historic farm—Half Hill Farm—building a reputation for exceptional private dinners and events. But when the world changed in 2020, the couple shifted gears, diving headfirst into the art of smoking meat and launching Farm Boy BBQ.
The Craft of Smoking Meat, Texas-Style
With a commitment to excellence, Paul embraced the art of Central Texas BBQ, dedicating countless hours to perfecting his craft. His research and self-training in the art of low-and-slow smoking led to the creation of Farm Boy BBQ, where the meats are seasoned simply with salt and freshly ground 16-mesh black pepper, then smoked for hours in custom-built reverse flow smokers. Farm Boy BBQ uses prime, antibiotic-free, hormone-free meats, ensuring the highest quality in every bite.
